Murderer’s Bay Pork Fillet Salad
1 Pork fillet (serves 4)
1/2 c Murderers Bay Rum
1/2 c soy sauce
1/2 c sweet chili sauce
2 packs of instant noodles
salad leaves (mixed)
Combine first 4 ingredients and marinate pork in fridge for several hours. Preheat BBQ to hot. Remove from marinade (reserve) and sear pork for 2 minutes on all sides equally above flame grill, then place on top rack, close lid, and lower heat to minimum and slow bake for 10- 12 minutes. Remove and loosely cover while prepping your other side dishes. Boil instant noodles, drain and place in bottom of bowl. Make a fresh leaf salad to go on top of noodles. Slice pork on the angle into 1/2 inch slices and divide among four serves. Quickly bring remaining marinade to a boil and add stock or water if needed to thin to desired consistency. Use this as a hot dressing to drizzle over pork and salad.
